Football Sunday Chili....

A cloudy Sunday in Fall is my favorite kind of day. What's not to love? The weather is perfect, church was enlightening, there is time to sit down and clean the house, and best of all, Sunday Night Football.
 
If your hubby is anything like mine, he wants to sit down with a cold beer and some good grub as we are serenaded by Faith Hill in her little dress and perfect legs (admit it ladies, even if we are a little jealous, you can't stop watching her either). Well, here is a concoction for Sunday Night Football that will draw your husband away from Faith's shapely stilts and put his mind back on his lady sitting next to him and get him fueled up for the game.
 

 

Football Sunday Chili

Prep-time: 20 mins
Cook-time: at least 2 hours
 

What you need:

 
 
 
 
 
 
 
 
 
 
 
 
4 pork chops - cut the fat off, we don't need that bad stuff!
1 lbs ground turkey - I like the fresh stuff better, our lame commisary didn't have it though.
1 lbs stew beef (pre-cubed beef)
1 can red beans - not pictured. I am a ding-dong and have to run back to the store for some.
2 large cans of tomato sauce
1 regular can of tomato suace
1 heaping tbs ground cumin - add more or less to your liking.
1 heaping tbs chili powder -
1 tsp ground red pepper - use this to your liking. I use 2 tsp but I love it spicy.
2 tsp onion powder- Or freshly chopped onion - I didn't have any around... oh, well.
2 tsp garlic powder- or you can use fresh minced garlic - again, I didn't have any on hand.
Some salt & pepper
Cooking spray
Reduced-fat or Fat-free cheddar cheese
Fritos chips
 

How throw it all together:

 
1. Start by spraying down a large pot with your cooking spray.
2. Heat the stove to medium-high and allow time for your pot to get toasty.
3. Start off with cooking your meats. I like to start with the ground turkey to ensure the pieces are a perfect size. Once the turkey is added to the pot, add some of your garlic and onion powder. Cook the turkey all of the way through. Once cooked, place that in a section of the pot to allow for your pork to go in next.
4. Place your pork on the open spot in your pot. Add a little more onion powder and garlic powder.
5. Once the Pork is cook most of the way (there can be some pink spots), add your beef. The beef will cook pretty quickly and you don't want to cook it all of the through. This will ensure that your beef chunks aren't beef jerky by the time you get to eat your chili.
6. Add a little bit of salt and pepper to your meat mixture.
7. Add the cans of tomato sauce and decrease your heat to medium.
8. Add your huge heaps of cumin, chili powder and red pepper. Do not stir the seasonings in yet. Cover your pot and keep the heat on medium. This process allows the seasonings to retain some moisture and gives a boost to the flavor before you stir it in. Allow to sit ~5 minutes.
9. Stir in the seasonings, cover back up, and and turn the heat to low-medium.
10. About 45 minutes before you are ready to serve your chili, drain and rinse your beans then add them to your pot. At this point, its a good idea to taste your chili to make sure you have a great flavor. The longer you let the chili cook, the better the flavor will be, especially if you want it spicy.
11. When you are ready to serve up your chili, place it into a bowl, add a little bit of your reduced-fat or fat-free cheddar cheese and a few fritos to the top.
12. Enjoy the site of your man rolling his eyes to the back of his head.
 
*As a side, I like to add Bisquik garlic and cheese bicuits or corn bread, depending on the feeling of the day.
